THE TEAM

THE PLAYER

You will be “second in command” of the kitchen; assist the Executive Chef in supervising food production for all food outlets, banquet events and other functions at the club. You will also supervise food production personnel, assist with food production tasks as needed and assure that quality and cost standards are consistently attained.

EVERY DAY, YOU WILL

  • Prepare or directly supervise kitchen staff responsible for the daily preparation of soups, sauces and “specials” to ensure that methods of cooking, garnishing and portion sizes are as prescribed by standardized recipes.
  • Assist the Executive Chef with monthly inventories, pricing, cost controls, requisitioning and issuing for food production.
  • Assume complete charge of the kitchen in the absence of the Executive Chef.
  • Assist Executive Chef with supervision and training of employees, sanitation and safety, menu planning and related production activities.
  • Consistently maintain standards of quality, cost, eye appeal and flavor of foods.
  • Ensure proper staffing for maximum productivity and high standards of quality; controls food and payroll costs to achieve maximum profitability.
  • Make appropriate recommendations for maintenance, repair and upkeep for the kitchen and its equipment.
  • Prepare reports, schedules, costs menus and performs other administrative duties as assigned by the Executive Chef.
  • Work at any station as assigned by the Executive Chef.
  • Help plan energy conservation procedures in the kitchen.
  • Assist in the development of training and the provision of professional development opportunities for all kitchen staff.
  • Consults with dining service personnel during daily line-ups.
  • Assist in maintaining security of kitchen including equipment, food and supply inventories.
  • Assist in food procurement, delivery, storage and issuing of food items.
  • Expedite food orders during peak service hours.
  • Supervise, train, and evaluate kitchen personnel.
  • Coordinate buffet presentations.
  • Check kitchen areas before service time and inspects presentation of food items to ensure that quality standards are met.
  • Report all member/guest complaints to the Chef and assists in resolving complaints.
  • Submit ideas for future goals, operational improvements, and personnel management to the Chef.
  • Manage food production for banquet functions, holiday buffets, Sunday brunch and other special occasions including menu development, costing and execution.
Requirements:

YOU WILL BE GREAT AT THE BELOIT CLUB IF (MINIMUM QUALIFICATIONS)

  • You have a minimum of 3 years of experience in varied kitchen positions including food preparation, banquet prep and execution, line cook, grill, sauté, fry cook and expediter.
  • You have at least 1 years’ experience in a similar capacity.
  • You have a Culinary Associate degree preferred, but not required.
  • You must be able to effectively communicate verbally, in written format and digitally (email) with managers, the kitchen and dining room personnel, and guests

YOU ARE A VARSITY TEAM PLAYER IF (PREFERRED QUALIFICATIONS)

  • You have a culinary degree
  • You have worked in a upscale, fast paced kitchen environment
  • You have Serve Safe certification and Food Manager certification

PHYSICAL AND MENTAL REQUIREMENTS

You are regularly required to stand; use hands to finger, handle, or feel; and reach with hands and arms. You will be frequently required to lift, carry, and deliver boxes and items that may weigh up to 50 pounds. If over 18, you will be required to use slicers and heavy equipment. The environment can sometimes be hot and demanding. You must be able to smoothly navigate dining room, kitchen, and other facility areas, attend work as scheduled, work various schedules and shifts throughout normal business hours. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception, and ability to adjust focus.
