Summary: Responsible for smoking and dyeing products.

Essential Duties and Responsibilities:

Learn dye, liquid smoke and temperature requirements for various products.

Verify dye and smoke mixture for product being smoked.

Monitor smokehouse for proper operation; damper movement, water level in troughs, control panel charts; notify Supervisor of any problems.

Load and unload smokehouse properly.

Disassemble, clean and reassemble equipment for product changeover and end of shift.

Must adhere to Hazard Analysis Critical Control Point (HACCP) and HACCP pre-requisite programs, Good Manufacturing Practice (GMP), Sanitation Standard Operating Procedure (SSOP) guidelines or Federal regulations.

Other duties assigned as required.

Education and/or Experience: High school diploma or general education degree (GED). All personnel will receive HACCP, Pre-requisite program, GMP’s and SSOP program training prior to entering plant operations. Must be able to read measuring device, add, subtract, multiply and divide.

Language Skills: Able to read, analyze and interpret procedure sheets, training and safety material provided by company. Effectively communicate with co-workers and management. Write charts.

Physical Demands: Stand, bend from waist, reach with arms. Push or pull wheeled product racks weighing up to 600 lbs., lift 50 lbs.

Individuals are exposed to wet and/or humid conditions occasional high heat, ambient temperatures and concrete floors. Wear rubber boots.
